Cook: Bacon-Wrapped Beef Tenderloin

Want to leave a lasting impression on your Valentine (and his or her taste buds)? This recipe is incredibly easy to make without looking like it is, and oh so flavorful. The bacon and beef are a match made in heaven, making it the perfect dish for a Valentine’s celebration. For double perfection, we served ours with a steamed artichoke and garlic-infused melted butter. Yum!

Ingredients:

Grass-Fed Beef Tenderloin
Smoked In-House Andouille Bacon (available for a limited time at the meat counter)

Preparation:

1. Wrap the tenderloin in strips of our in-house smoked bacon. (We recommend the Andouille variety, but you can’t really go wrong no matter which variety you choose!)
2. Put the wrapped tenderloin into a metal pan or cast iron skillet and place it in the oven.
3. Broil on high for 5-8 minutes. Flip, and broil for an additional 5-8 minutes, until the bacon is crispy and the meat is cooked to your satisfaction. Be careful of popping grease!

We served our tenderloin with a steamed artichoke and garlic-infused melted butter. One tenderloin can typically feed two people, so cut it in half to serve, or if you’re feeling particularly romantic, feast from the same dish!
